This is a Springbok. TJ was particularly struck by them this weekend, calling them some of the most beautiful and graceful creatures he has ever seen. They look a bit like deer but have reddish coats, solid white bellies, and black horizontal stripes across their sides.
According to the "Animal Facts" in the program the Rhino & Lion Reserve gave us, the springbok weighs 36-50 kg and has a gestation period of about 5 months.
What the program left out is that they are DEE-licious!! Especially cut into tender medallions, marinated in red wine and fig, and served medium rare over pearl barley. Mmmmmmmm.

My eyebrows leaped up to my hairline when I reached the third paragraph! Poor springbok, but at least you guys are staying well-fed!
